To be honest, there really aren't a lot of health effects of incest for most people. It's taboo, so they put the nightmare spin on it.
The birth defects tend to happen when you 'fold' incest through 3 generations. That's why horse and dog breeders use the one-off rule.
There needs to be fresh bloodline every other pairing. It's for histocompatibility (Immune system) and the mind.
Long before birth defects will show up from excessive incest, you'll see neoteny. Neoteny is what keeps the floppy ears in dogs, and resulted in blue eyes like you see in huskies.
These recessive traits get squished out, when new blood shows up, that's why red-heads and blue-eyes people are making up less and less of the population, they were incest traits.

Yep! Almost everyone is born with blue eyes. Most whites are born with blond hair. Neoteny is the retention of journal traits.
In fact... Those that keep their blue eyes through a mutation, likely caused by incest(neoteny) share a pretty important common ancestor.
