Pretty sure that for the most part, eating demons is dangerous as you risk ending up as a demon, or dying because breathing techniques and demon blood don't mix. The guy who could do it has a unique stomach or something that allows him to partially transform into a demon for a short time.

Also, they're trying to kill demons, and you gotta assume that for the most part, you're not dealing with super dangerous demons that has special abilities that may or may not break the laws of reality. The series don't focus on those, but the unique ones that requires the MC, friends, and allies to handle.
