One of the perks of eating at KFP is you can eat the owner and she'll be back the next day. The only downside is that this is the most expensive item on the menu.
So much of the spatchcocking I've seen here and other places like to split the dish from the front, so I figured I would try to do a traditional split from the back. Kiara was perfect choice because she's often confused for a chicken.
