Fatty meat is more tasty. Or maybe judging by that spread-bar, somebody's getting fattened up because whoever's gonna make use of them likes a heftier flank to pound.
Maybe both, no reason you can't rut your food until it gets filling enough.
I'm glad you like it! The next four months for me are uncertain but if time permits I'd like to open a slot or two, but I'm really not sure if I'll be able to. I will make a blog post if I do, though.
