I can see Foxes, aka Kitsune, or wolves being the Yakuza actually. Tanuki not so much. Kitsune because of their "Tails of Power" ideal. More tails means more power, so the more tails one has, the more cocky they are. Wolves might actually be a little too obvious, considering the Alpha would be the boss and have the complete and utter devotion of the rest of the Yakuza because... well, he's the Alpha. You don't turn on the Alpha.

The Shiba Yakuza thug mentioned Nuki being a remnant of the fallen "Tanuki Clan"
