in the rampage games, you are eating people left and right for those extra points, but if you lose all your hp you get knocked out of the mutation and back to normal. And it seems whatever they ate was dissolved so thoroughly that it leaves no trace on their figure as a human.
of course this is a limitation of the game, but i guess it can be used as an idea for how in-survivable the insides of a RAMPAGE(tm) Kaiju is
