Not definitively, got to resist interpretation at least a little, but it seems like maybe the ancient empire of alchemists who worshipped the sun, somehow captured the sun's spirit and locked her into a captivity that endures far beyond the death of their civilisation, forever scarring the earth with her power.
Then again, people's minds come up with all sorts of things when they're placed under extreme conditions. Who's to determine precisely what's real in such circumstances?
Presumably the sun still rises, it's been rising for thousands of years without its spirit, but what does it matter if she can't get out of the hole?
This is her world now- a moment of violence and greed in the dark.
In this story it's not really brought up, but in the Gluttersaga mythos, which this is connected to, dragons believe that souls live on in the fat- the more of a connection and understanding there was between the eater and the eaten, the more awake that soul is, and the more power it grants.

Did the dragon doom the world?
I had to reread it and still do not fully understand it,

Doom the world? No, I don't think so.

Can you explain what was the talk about the sun about and why the final prey mattered?

I think I actually figured that part out.
What I was confused by, is the sun still rising or not, and what is the effects of eating here vs freeing her on other parts of the world?

You made a haunting story, what happens to souls post death in your story.
Does the sun have a afterlife to look forward to.
