what kind of predator is mocha? Does she just innocently follow instincts to eat creatures smaller than her, does she know shes eating sapient beings and simply does not care, or something else?

She's mostly pretty innocent in how she thinks. Probably hovering around the idea that tinies are funny little tasty toys. And probably reasoning that they wouldn't be so easy to eat if they weren't food.
