You forget 2 things for that opening sentence: 1: The end of the very first episode of the anime, Ash seeing Ho-oh. Poké-myth states that should you see one, you shall be granted eternal happiness. There could possibly be an age limit for being a trainer, so as a result of the myth, Ash will only age once being a Pokémon trainer loses its appeal to him.
The 2nd thing is the 1st movie: Ash gets turned to stone. Yes, the Pokémon's tears brought him back, but a small part of him could still be petrified, and that part is what allows him to age.
