I wonder if the two meats cook at different speeds? It could take a bit of skill to get the right temperature for both halves at once

Hmm...you do have a point there.
If the outer scales - or scales entirely - are still on the mermaid when grilling, that lower half might take longer to cook.
I hope that sauce he's basting her with helps even the cooking process for both parts of her.
