From time to time, our patrons like to watch their meals roasting in front of them. One of the fun variants of the live spit-roast is the vertical spit-roast. The onlookers get a little show as the meat dances on the bed of hot coals, and wriggles up and down the spit as the flames lick their flesh.

One of the downsides to this method is that the meat takes more time to cook evenly.
