Either she shrunk herself down or somehow those mortals were unfortunate enough to be giant sized but NOT enough to escape her appetite! (Of all the things to take from Rose's lessons, it turned out to be the eating!)

Jokes aside, you really nailed her look and vibe; the stern and forbidding demeanor that's essential to her is something I see a lot of people not really do, but you got it very well!
