there was definitely a pattern with Shion not reciprocating affection and instead using her appeal to deal with her hunger, but her directly stating her lack of interest altogether is nice.

Well, sometimes I make her hair black because I want to.
The thing is, if you look at the first Sonia's drawings, I used to paint her hair black in the sketches, I stopped doing that because I was a bit lazy.

But the idea was (in sketches and manga style) to have Sonia's hair colored black to show that Sonia's hair is darker tone than Shion's (To separate them, since in universe, they have the exact same hair color.)
