Question, if Someone, say I were to eat someone with their head able to detach from their bodies like that and I digested their body but not the head would the head stay alive or would it digest with the rest of the body outside the stomach?

Guess that really depends on the situation. In Setsuna's case her head wouldn't digest but would cease to function after a little while.
