There's four Pillar Men, and Santana is the only one who can absorb. Acideecy has basically lava for blood, Wamuu can control wind, Cars is, well, Cars, and all of them can regenerate insanely fast unless they're damaged with Hamon or sunlight, IIRC.

Actually ALL Pillarmen are capable of absorption. Not just Santana. Remember how that one guy named Mark died? Also, Esidisi (or AC/DC) doesn't have lava for blood, he actually just increases his body's temperature to 500 degrees Celsius. So while his blood is just blood, its temperature is pretty much on par with or superior to that of lava.
I'm really sorry if I just came out of nowhere and sounded like an ass.

Would you happen to know if they completely absorb their meals, or if they produce any waste or fat material? Also, they aren't just carnivores are they?

Yes, they completely absorb their victims and nothing is left from them. And as for that last question, no information has been given on that subject.
