I suppose if Steven's mother can 'create' a womb for herself, Peridot can create a stomach. She even seems to have backup bodies at the ready in her head, as evidenced by how quickly she was able to reform her body after being poofed. If you remember, it took Pearl MONTHS to form HER new body

The only thing that determines how long it takes to come back from being poofed is the gem in question deciding on a new form. Pearl's just a perfectionist. :)
