This is why I enjoy Mimics. You don't really know just what trickery they will pull (unless it's you into their mouth).

Turning the prey into coins just makes me think it wanders about, pretending to be a regular chest for some and a pred for others, setting up the idea that there is more than one chest in the dungeon with treasure in it. Or it fills up real chests, so sooner or later, someone will get added to the pile.
