For context, vore goes by different terms in this setting. While some content may elaborate on the nature of said techniques, not every post is guaranteed to do this. Please read the list below if confused about anything:
Assimilation: Fatal digestion. The most well-known form of vore among Gemkind, Assimilation involves one Gem digesting not only a Gem's hardlight body, but their core gem as well. This Shatters the gem, allowing the pred to absorb the power, abilities, and memories of the prey. Think along the lines of soul vore, and they're pretty much the same thing. Originally, Assimilation was reserved as punishment for criminals and 'defective' Gems by the Diamond Authority, where only Gem nobility and the Diamonds could legally practice it, but Era 3 has seen a surge in its popularity.
Sealing: Fatal digestion. Similar to Assimilation, Sealing involves the predator digesting the prey's gem. Instead of deleting the prey's mind, however, the predator creates an exact copy with their memories. This allows the prey to live inside the predator's gem, forming a second personality. Depending on the predator's wishes, the Gems can share their hardlight body, granting the prey a second life. Alternatively, the pred can trap the prey inside the gem forever, little more than a plaything, especially since Gems can form mental constructs of themselves inside their gem's inner universe. Regardless, the pred is inherently the dominant mind; the prey may vary from a friend to an enemy, but they're still a prison in someone else's body. Nothing short of an indominable will and the pred suffering mental exhaustion will permit the prey to turn the tides and assert control.
Melding: Non-fatal digestion. While Assimilation allows predators to steal power from another's gem, Shattering the prey isn't necessary. Melding allows a predator to leech power from prey before releasing them whole. While this doesn't involve any ability gain or memory theft, the prey is alive and safe. Gem nobles and leaders alike practiced Melding as a form of discipline, teaching disobedient drones to follow orders or else be Assimilated next time. Punishing failure was seen as another just cause. The power loss involved with Melding typically leaves prey weak as humans, but if a Gem absorbs enough sunlight (or somehow Assimilates another Gem), they can return to their base level of strength. A common sign of a recently-Melded Gem is a flat, featureless frame; Gems can't summon the strength to create Appearance Modifiers, making them look nude. Gem who practiced Assimilation will also lose any power boost gained from previous meals.
Sculpting: Non-fatal vore. The rarest form of vore among Gemkind, Sculpting is the colloquial term for 'forced fusion.' When a Gem devours another, they can release a high-pitched frequency that harmonizes with the prey's gem. Given enough time and pressure, the Gems will sync and fuse together, regardless of the disharmony between the partners. So long as this frequency continues with little-to-no interruption, the fusion can last indefinitely. Obviously, this technique is difficult to achieve and maintain, given the struggles involved with unwilling prey, and doesn't boost the pred's power as high as Assimilation does. However, the predator does acquire the prey's abilities and memories, and has full freedom to shapeshift their hardlight body. Similar to Sealing, the prey is trapped within their own gem; able to observe the world through the pred's eyes, but unable to interact with it.
Body Bubbling: Non-fatal vore. In some ways, Body Bubbling is a stronger, if more dangerous version of Bubbling. In other ways, its a less-than-wholesome kink for Gems who claim 'honor' to deflect criticisms about being a pervert. In short, Body Bubbling is when a pred 'Bubbles' another Gem by devouring them. Similar to Bubbling, Body Bubbling can serve the purposes like transporting prey across space, imprisoning them someplace secure, or letting them relax someplace warm and moist. Body Bubbling can see a prey devoured as a gem or with their hardlight body intact, though the latter requires strict concentration from the pred to avoid accidentally poofing the prey. Given the prey's helplessness while trapped in the pred's bowels, Body Bubbling carries a high risk of Shattering and/or Assimilation, but provides the prey with a bodyguard over a fragile bubble. This is essentially an in-universe name for endosoma.
As a side note, vore in this Steven Universe AU does see predators eat non-Gems like humans and aliens. Whenever Gems eat organic lifeforms, they don't acquire anything but base nutrients. They will undergo weight gain, but it is temporary; Gems simply burn the calories away over time. Gems can Seal organic prey into their gems, but the prey's mind can't be perfectly preserved like a Gem's. Overtime, the prey's memories will be absorbed by the predator until the last ounce of individuality fades. This last feature isn't a hard rule, however, especially if the predator refreshes the prey's mind of their own memories.
Conversely, any weight gain from devouring other Gems is permeant. Vore causes a predator's hardlight body change to reflect the power gain, often making their muscles bigger, chests bouncier, bellies rounder, and hips wider. Gems can gently guide where this stolen power accumulates on their body, but ultimately it fills out their form wherever it likes. For example, Peril's power concentrates on her hips while barely touching her chest. Gems can still shapeshift to reflect their desired form, such as Peril shrinking her ample booty, but it requires constant concentration. As such, a curvy and/or beefy figure on a Gem is commonly seen as proof of Assimilation, Sealing, and other types of vore; after all, a Gem's might doesn't come from muscles or fat, but the power instilled in their gem. An ample bosom on a Gem noble was clear evidence of how many Gems she devoured over millennia, and as such, Gems recognize it as a sign of both beauty and deadly intent.
