Icena prefers to steal the goods and go. It is more profitable that way.
However, when push comes to shove, she will not hesitate to remove the target in order to get what she wants.
Of course, that means being weighed down, interrupting her work.
Here, she has tried to pickpocket Christy, but gets caught in the act.
A scuffle later and Christy's possessions are scattered to the sides, followed by one method of getting rid of witnesses.
No more pick-pocketing for a bit now, but a good haul of clothes and other items will make up for it.

Stealing more than just the purse, at least she won't have to spend the stolen money on groceries.

Unlike most people, she doesn't eat people for food. She would rather buy a meal than eat someone.
This is an extreme case.

Your confusion might be of "If she doesn't eat people for food... why does she still digest them?"
Well... simple that... on a day to day schedule, she doesn't see other people as food. Food doesn't provide fresh loot if it is gone forever.
That said, she does have a cover to keep.
