As he trots from town to town delivering mail, Hialfi is occasionally paid to "deal with" assorted local monsters or bandits. Given that he rarely has the money to buy food, it's not surprising that he disposes of these ne'er-do-wells very...efficiently.

I feel like The Tale of the Lonely Mox would make quite the interesting ballad to hear in full, just need to make sure Hialfi isn't in the room listening as well.

Poor Hialfi.
Even when he wins a meal or keeps his life, he somehow loses.
Heck, here he is unwillingly humping and humiliating his latest meal, and it's going to be immortalized in song and last longer than any other part of that griffin's legacy.

Could Hialfi just get a Ring of Sustenance and end his guilty gorging?

Sure, but he doesn't have the money to buy one. He used to have a ring that helped against missile weapons but he lost it in an incident with a dragoness. Until he gets lucky with a bounty or finds some unxpectedly good loot on a bandit he's just too poor to afford magic items.

Could he team up with an adventuring party to get the loot he needs, or is the mortality rate among adventurers too off-putting?

While Hialfi is formidable in a fight, he's also an enormous target. Adventuring groups rightly suggest he would give away their presence and, naturally, underground adventures are pretty much out of the question. Plus, he's always the first one an enemy would shoot at.

Well shoot, that Ring of Protection from Missiles would have helpfully negated that problem.
Is there any legitimate way he could earn that much money?
The 2,500 doesn't sound unattainable, even if he has a limited amount of job opportunities.
But would that be a priority for him? What are his current or long-term goals?

Hialfi is roughly 20 times the mass of a good sized man and has to eat 20 times as much. The issue is that it's hard to find a job where someone is willing to pay for one large worker the same as they'd pay 20 smaller ones. His normal job is delivering the mail, since he can trot at speeds that only fliers can match, and he picks off monsters for bounties. Even where there's no bounty he will eat bandits or other 'bad' monsters, though he often feels terrible about it. He also gets a bit of money for appearing as a carnival ride at local fairs. He also works from time to time as a "crane" on construction projects.

The occasional healing magic he has to buy tends to keep his savings low and he hasn't thought of something better to do with his life than just be a mailman. He's something of a freak of nature and though the locals have a very good opinion of him and often let him sleep in their barns, there's really no one he can settle down with.

If he found a very rich woman with a giant sorta-feral male fetish I suppose he could make a bunch of money in short order. Other than that he's playing the loot lottery from bandits and such and trying to be happy living in a pretty nice area with villages and good people.
