This is number 2 of a 5 part image series.
The skewers are made from bamboo and commonly found in supermarkets and food shops. For most recipes, these types of skewers are soaked in water ahead of time to prevent the wood from scorching or burning during cooking. For these appetizers, the skewers will not require soaking, as the food will not be cooked.
Chef Anita pays special attention to ensure that the skewers are free of splinters and cracks. She also sharpens the ends of the skewers to make insertion into the food easier. For this style of preparation, insertion should be done from the bottom. There are two obvious choices for where to insert the skewer, and the decision is usually based on the skill of the chef.
The preferred entry is through the vulva, but requires a high level of skill threading the skewer to minimize the amount of trauma and damage as the skewer travels through highly vascular areas of the food. Entry through the anus will result in a significant amount of unavoidable damage and fluid loss. If the food is not prepared live, or will be cooked on a barbeque, this would not be an issue. Because tonight's appetizers are served fresh and uncooked, Chef Anita chooses to inset the skewers through the vulva.

I'd agree with this sentiment. I would prefer the rear option for the skewer tho.

Why not both? Actually, both would prevent the food from sliding down the skewer, due to gravity.
