Honestly, I'm just trying to draw up interesting cultural differences. to create a society with a rather alien feel to it, without making it too difficult to associate with. (i some ways I'm just homaging my first playthrough of Morrowind where everything just seemed so foreign... but where it bult up a living breathing place, rather than just told a story.)
culturally, we have taboos related to public urination, and associations of involuntary urination with cowardice. So, I'm drawing on those, and mixing in a bit of ancestor worship.
In cannon, I'd probably explain it as being that there are enough of their ancestor's bones lying around that pissing in death would likely be over the graves of their ancestors. That and as a form of machismo,(seeing as women tend to take the traditional gender roles of Men in the World of Bones) you are supposed to take your death well, and not go out like a punk bitch.
Functionally for the story, it servers the purpose of unfairly demeaning the victims, shaming them for partaking in a natural bodily function.
It's a little bit of consistent world building that I think makes a bit of logical sense in the context of the World of Bones.
