Theoretically Star could digest people but that's not something you'll ever see her doing. Star's character has changed since her inception and I think it's safe to say at this point that she's not going to be going down that route. The character I use for darker stuff like that is Aya.
Sometimes "can but won't" is an important aspect of who a character is. It tells us more about her as a person then just her physical limits. And she's a beautiful person btw.
Believe it or not this Star actually came out first. Though I imagine the Star from SVtFoE probably existed before this Star since shows like that are usually in pre-production for a couple years beforehand.
