I don't know if the same applies to the rest of cases, but here we actually see that more like prey disolving and the feces taking its shape, it's rather a more literal approach to turning into poop.

To the point, it seems from that last panel, they're conscious and just encased, as if they were petrified. Or, uhm, poopified?

I get why people like it, even further degradation, disregard, etc. Not much for me to argue here as nothing should ever be catered to just one group or preference and you aren't obligated to do anything but what you want. I personally don't like shit at all. IRL I'm a coprophobe and shit has never ever done anything but disgust me in porn - but I like disposal. It may be that someone doesn't care about the shit at all: the reason why it turns them on is the stuff surrounding the shit itself, if that makes sense.
