Probably. The hooves are quite useful for many different things, not least of which is the protection of his ankles. It would be like cutting your feet off.
Scent glands are a little better comparison, but they may have something to do with the chemical balance of Aurora's body. Removing those glands (though they are designed for defense only) may cause some imbalance in her body. What would it do with the toxic materials that she digests and uses to produce that liquid? Would it be forced through her filtering organs? If so, the additional strain could have a similar effect to drinking too heavily every day.
The stinger is a different matter though. Not only is it unnecessary, but it can also get caught on things and accidentally injure someone you love if they're in close proximity. As it is, Lucky cannot be the big spoon with her when they sleep.
Anthropomorphism introduces some fun ideas when dealing with the problems that might arise from varying anatomies. I understand that "wholeness" is a value that is widely ingrained in the social consciousness of America, but please try and consider the context of this world, which is very different from ours. : 3
