Personally I think this wasn't the knight hired to protect her at all, just a random hungry knight she made the mistake of insulting. After all the knight seemed surprised there are dragons.

The way that gut looks, it appears that the Princess traded the threat of the dragon for the threat of becoming fat on the knight’s hips. And waste in the outhouse…
