Here's a correction: blobfish actually look like this after being reeled up because they don't get the pressure that keeps them together and they die due to it. This might not make any sense but remember: we constantly live in the conditions of atmospheric pressure which also keeps us together and prevents us from just falling apart, blobfish normally live in deep sea so pulling them up makes them fall apart.

So in short: you are correct about the fact they do not look like this underwater, but the real reason why they begin to look like this is due to them getting depressurized to death.

it really looks like a sad scene from a movie. I somehow Like it because if how it looks like a scene from a movie and I don’t like it because.. who has a fettish for people melting? For example someone walks up to you and says: “hey I am really into people fading into dust when Thanos snapped his fingers.” anyway I should stop complaining why this fucking weird and accept everyone likes something else... it still looks like a scene from a movie.

An old post, but heres my take on the ending , if this is anything like pennywise, perhapes its using scaretactics to weaken her, and not being overcomed by this, this woman breaks out and finally rids of this thing and it becomes no longer a threat where it would then have to sleep for 37 years.
